Mmmm, Chocolate….
Class ended early tonight. It was only 1 hour long.
SNACK:
Golden Delicious apple
APPETIZER:
I was getting hungry and impatient for the rice to cook, so I had to have something to eat while it was cooking.
Finally, the last of the ciabatta bread topped with salsa.
DINNER:
Tonight’s dinner was a combo of morning star farms’ meal starters with green beans and broccoli with black bean sauce. There’s no recipe for this because it was…let’s just say…not too good.

Vegan Mint Chocolate Cake I found this recipe online when I first started trying to cook vegan. It’s been sitting in my recipe collection ever since. I don’t really like mint, but Long loves it. I had an urge to start baking, but couldn’t figure out what to do. I thought to myself, why not make something that he really enjoys. As you can see, I’m not much of a cake decorator.
Other than the structure, it turned out quite nicely. The recipe is a little difficult though because they don’t give you a time to take out the cake. I initially set it in there for 20 minutes then added 10 more then 6 more then 4 more then 10 more minutes. A total of 50 minutes! The chocolate frosting I added 2 T. of soymilk to the 1/4 cup. It came out to be the perfect consistency.
Ok time to go to bed!

Wow, I don’t know which sounds better – the ciabatta bread topped with salsa, or the ciabatta bread topped with pesto (like yu had the other day)… they’re both fabulous combinations!
Vegan Mint-Chocolate Cake?? It looks perfect to me!! I’ll take a slice, please ;0)

haha that cake is adorable! it’s definitely got character…and i’d pick it over a beautifully decorated any day. it’s so cute!! too bad your stir fry wasnt too good…im going to try to make one tonight…got any good peanut sauce recipes?

Oh my God, that cake looks and sounds like the most amazing thing on earth! My birthday is in September– will you make me one? I am going to go click on the link right after this!
I’ve taken Smuckers’ fluff on camping trips before, and it holds up really well! It makes yummy yummy s’mores! Ugh, I wish I were going camping now!
