It’s Hot Pot!

I realized that I haven’t been getting much veggies in lately, so the first thing I had for “lunch” was a small plate of greens. I also brought out a small container of soy yogurt, but didn’t have enough room because I also drank a lot of water. Wonderful water…..ah anyway, I’m thinking about adding a new page of my running schedule, so that if anyone was ever curious, they could take a look see at my running activities. Not sure. I think I have a little too much going on, with both side margins and top all occupied with links.

Well, just a thought, have a good night and see ya’ll after my next meal!

SNACK:

I also had a chocolate chip peanut crunch in class tonight along with Turkish apricots. Sorry there’s no documentation, I forgot my camera at home. But, I have pictures for the rest of the night…enjoy.. :-D

1/2 a cucumber and a handful of broccoli florets

Roasted red pepper hummus

a small banana

Avocado, veggie muffin, and whole wheat toast topped with peanut butter

When you combine: zucchini rounds, julienned red bell peppers, bok choy….

water spinach and white button mushrooms…

Tofu chunks…

with a hot pot! You get Yao Hawn! The base (soup) is fermented soy beans. Although it’s tasty, you don’t actually take a spoonful of the soup directly to your mouth. The veggies (or thinly sliced meat) is cooked right in the community pot. (my hands are always showing up in the pics! haha)

Here’s how it looked like while it was cooking away. The hardest part for me is having to wait for the veggies to cook all the way through.

While waiting, I snacked on Sun chips with Homemade Cheese Sauce. This stuff is wonderful!

Looks like you really managed to get your veggies in!

Thats it! I have seen so much hummus (which I LOVE) floating around the blogosphere that you have convinced me to make some this weekend and take hummus plates in to work next week!

I’ve completely forgotten about eating veggies! I know they’re important, but sometimes I forget to make them a priority. It’s hard to concentrate with sweets around, especially the cinnabun cereal. haha. You’re so good though, I always see a bunch of veggies on your blog.

I normally eat hot pot with family members, which I’m less grossed out with. I have yet to have it with friends because It’s a little difficult to find vegetarian/vegan hot pots. I don’t think I’d be too keen on the “communal thing” either if there was a bunch of people around who didn’t know the “silent rule,” which is never stick the side of the chopsticks that touched your lips, use the other end.

    Jennifer:
