I made Enchiladas!
OK no more drama here. Thanks everyone for the support!
This is a food blog, so let’s talk about food!
I finally made enchiladas tonight. Since I’m still new to using dried beans, I happened to miss one small step. Well…more like a huge step! I kind of didn’t cook the beans. They were a little chewier and harder. I ended up picking the beans out, there wasn’t all that much, and added cooked beans to the dish later. It was still delicious though. I’m not even that big on enchiladas or Mexican food in general, but after making it from scratch, I’m learning to appreciate all the flavors and textures of it. I will definitely make this again. BREAKFAST:
Since I didn’t take any pictures, I’ll just write down what I ate:
coffee, black and I think that was it…..
SNACKS:
1/2 of the wheat bread topped with 1 T. of Smart Balance Margarine.
Blended Chai Tea
Cheese pizza topped with mushrooms, artichokes, zucchini, with a side of fruit
Homemade Popcorn lightly sprinkled with salt and sugar
Carrot cake, second slice of pizza, and a little cookie hamburger made out of Nabisco cookies and a peppermint patty in the middle
DINNER:
Finally had a chance to make Jennifer’s Black Bean Asparagus Enchiladas. I made a few changes though.
no asparagus, used it for last weekend
Didn’t cook the beans! I later had to pick them out and cook them separately
Used her red sauce instead of the green enchilada sauce
Enchilada fillings: black beans, roasted veggies: Poblano, red bell pepper, & zucchini, along with red onions, garlic, and habanero & serrano peppers and spices
Before going into the oven
Spanish rice cooking while Enchilada’s were cooking in the oven
Finished product. It was so flavorful and spicy that I didn’t need to add anything else.
I should also note that I had a few slices of the chocolate ice cream cake before going to bed. It was the perfect late night indulgence.

SNACK:
2 medium oranges sliced













I can’t tell you how many times I’ve had ‘issues’ with dried beans. Whether I forget to soak them, forget to cook them, forget to even buy them! Hahaha!
Those enchiladas look fabulous! Yum! I bet the red sauce would be good on them!

Leng! Glad to see you are feeling better! You definitely have one of my most favorite blogs to read, so I appreciate your honesty and efforts, and of course hate to hear that you are stressed!
As for your food, the pizza and carrot cake…..well 2 of my most favorite foods! Yummy! Your enchiladas sound yummy too…though I’ve never tried making them. Were the cookie hamburgers your idea? Or somethign some one else made? It really does look like a mini burger!

It was a really good dish. Easy too! It wasn’t as hard as I thought they were and the red sauce went great with it too. Definitely will make these again.

The cookie hamburgers were another classmate’s idea. It was pretty cute! and does look like a real hamburger. When I first saw them I was a little confused. haha
