Schools out!
Well, Finals are officially over for me. Yay!!! Now What to do now that school is out. I have about a month to kill before Summer school starts up. Looking at jobs and volunteer opportunities. Hopefully something I like will pop up.
Next Monday two of Long’s students are having birthdays. That means I get to bake a cake! They requested strawberry cake, so I’m looking up strawberry cake recipes and trying to come up with fun ideas. Love baking! It’s a great way to relax.

Small banana

Breakfast:
Soy yogurt topped with homemade granola with a banana.
The coffee from Cherry Bean (Ethiopia Harrar) that I bought the other day is absolutely amazing! I could tell that it was fresh when I was making it because it created a little foam on top and the aroma…..! So wonderful!
Snack:
Small fuji apple
Lunch:
I started snacking on the mac n’ cheese from yesterday before I know it I almost ate the whole thing! I guess This would be my lunch….along with the salad.
Sun chips with the homemade “cheeso” Sauce
green grapes
a salad with ranch dressing
Dinner:
stir fry with black bean sauce and broccoli, carrots, and morningstar farms starter strips, eaten with white rice.
Dessert:
orange slices

1 slice of whole wheat toast topped with raspberry and apricot jam
Snack:
the last of the vegan cornbread
Lunch:
Salad with Zesty Italian dressing
strawberries
Snack:
Green Grapes, my favorite!
Wasabi Chips. I ate 1/2 the bag!
! They’re so addicting!
Roasted potatoes with ketchup
Dinner:
Vegan Macaroni and Cheese. I got this recipe from Vegan Tickles. Although, I messed up on the color, it was still really yummy. So surprising that it tastes so similar like cheese without the cheese or cheese substitute! The purplely color of my mac n’ cheese dish probably came from the extra shallots I added. haha. Also I overcooked the noodles a bit too, so I will have to watch myself the next time I make it. My favorite part–the crunchy cheesy bread crumbs on top. Soo Good!

Ahh, those green grapes look heavenly – I haven’t been able to find any good ones at Whole Foods lately!! So I’ve settled with the red ones :0)

Congrats on being out of school for the summer! I bet it feels nice, I always enjoyed the break.
I can’t wait to see what you come up with for your strawberry cake, I adore strawberries! And I really like the idea of strawberries in cake.
The way you described that coffee makes my mouth water!
All your fruit and veg! It looks so good.
And those roasted potatoes! I’m with you, just give me a big pile of potatoes and ketchup and I’ll be fine, just fine.
