Non stop noise
This morning is really gloomy and dark. I woke up to construction workers outside fixing something, again. There seems to be a lot of construction going on around this side of Oakland these days, which is not necessarily a bad thing. The roads, buildings and utility sites need to be fixed, it’s just a little inconvenient and noisy. Anyway, on to the good food below.
Breakfast:
I made these Bran Muffins w/ Cream Cheese frosting for Long’s breakfast, but couldn’t resist taking one for myself. They are so good! Not too sweet or too healthy tasting. The best part–it’s vegan!
medium Banana
Coffee, black. The best thing to waking up in the morning.

Lunch:
I was craving carbs yesterdays, so I made myself vegan whole grain waffles and topped 1/2 of one with pb and 1/4 of one with raspberry jam. The other whole I ate plain.
soy yogurt with granola
Snack:
Chips and salsa
The batch of muffins and his buddies.
Dinner:
Banh Cheo.
Finished product. This time I had peanuts to add to it.
Dessert:
Cherries
Snack
A little snacking on the pb & oatmeal cookies, which are now crumbles.















Ahh, bad weather & construction – talk about a lousy pairing!! Hang in there.
Oooh, those Bran Muffins look delish!! Hooray for vegan baking :0D

Aw, I hate it when the weather is bad, and construction – ick! They are constantly doing construction at the University I work at, it’s a bit hard to work with the noise sometimes.
Those muffins look fabulous. Did you get it from a cookbook or create your own recipe?

For the cupcakes, I just “veganized” a recipe from 101 cookbooks. I posted both my version and their version on the same page of the recipes page. The cream cheese frosting was more of something that I figured out to do over time when making frosting. For some reason the thought of cream cheese wouldn’t leave my mind. Coincidently, haha j/k I’ve had the Soy Toffuit Cream Cheese container in my fridge for a couple of weeks now and needed to use it up so it wouldn’t go to waste. Looks like everything turned out just fine.

The waffles look sooooo delicious. And cherries! I love cherries but haven’t had many in the past eight years as they are so expansive here in Oz.

Ugh, I had construction outside my apt. building every single day last year, starting at 5AM! I called the school to complain, but nothing ever changed.
But on the bright side, those muffins look delicious… and yum, fresh cherries!
