Egg rolls & green beans!

Bfast: cornbread, waffles + banana (below) with a cup of coffee.

Snack: more yogurt. I love this stuff. It’s so addicting!

Lunch: a bowl of cereal with plain soy milk. My body works really slow, so I wasn’t hungry until late late (like ~2 pm)

Snack: I had a pre-dinner snack, a cutie :-)

Snack/Dinner: I haven’t made eggrolls in so long. I’ll post the recipe later. It’s really simple to make, just time consuming. I made 2 versions, one with mung beans (right)….,

one with just yves “turkey” tvp (left).

Right: a nice refreshing cup of fruit shake!

Dinner: Amy’s bean and cheese burrito topped with salsa and a little bit of tapatio hot sauce.

Bfast: soy yogurt with granola & coffee

snack: mango slices and oranges

Lunch: Pb & J sandwich along with more soy yogurt with granola & ground flaxseeds

snack: coco rico soda and a carrot

Dessert: I’m having dessert before dinner :-D . Another stop at Crepes a go-go.

Dinner: Green Beans and Tomatoes with white rice. I love this dish!

P.S. I think a reader asked for this recipe a while back. It’s in the recipes page now. Sorry, I completely forgot!

Oh my goodness. Eggrolls, so good, I haven’t had them in so long! Another stupid question about Asian food: are the eggs in ‘eggrolls’ in the wrapper? For a long time, I thought the only difference between and eggroll and a spring roll was that the wrapper for spring rolls was thinner, and now I think I’m just dumb and have no idea what I am talking about.

And coconut soda? Sign me up. I got a real treat this weekend – some Jarritos, Mexican soda, I love the Lime flavor!

haha, it’s OK! I used to think that the wrappers had eggs in them also. Fortunately, the ingredients are just a combo of various flours. :-) Traditionally a beaten egg is added to the batter and/or to seal the rolls, but it can be omitted. To seal the egg rolls properly I used a mixture of cornstarch and water.

Ohh, I love anything with lime in it!

Wow you made those egg rolls? They look amazing. Much better even than the ones I’ve had in restaurants. And I’ll bet they are a ton healthier too.

You need to publish a food photography book, my friend – you’d TOTALLY make a fortune on it!!

The filling is a lot healthier because of the no egg or saturated fat from meats factor. I love egg rolls, but can never eat them at restaurants because they use the same oil to deep fry meats etcs. Was forced to do my own.
