Almost up to date…(I always seem to be behind)

Wednesday, 07.30.08

Breakfast: an old favorite–banana oatmeal topped with nuts (almonds) and peanut butter. Accompanied with a nice hot cup of coffee

Lunch: Left over banh xeo/cheo. This is the picture of it right off the skillet. The filling is basically sauteed mushrooms, onions, and morningstar TVP. The “pancake” batter has sliced green onions in it.

Lunch:

What is it about ranch dressing that makes any salad taste soOo darn good? This salad consisted of lettuce, bell peppers, zucchini, yellow onions, and mock meat (“ham” and “duck”)

I also had this wonderfully refreshing and tart nectarine. I dipped some into my yogurt…YuM!

Dinner:

Chai Noodle (of course :-) ) Started off with Thai iced tea. I think I may be getting close to learning how to make my own

Eggplant and garlic with various veggies in a black bean sauce. The purple color from the eggplant just makes this dish look so good and pretty to look at.

Various veggies with tofu and a mild sauce. From what I can remember….broccoli, bell peppers, onions, carrots, cauliflower,  cabbage, and some type of squash.

A beautiful and delicious bowl of curry. The usual veggies, bell peppers, cabbage, broccoli, carrots…. the green leaf on top is a basil leaf.

Too much to handle

These past two weeks of moving has really taken a toll on my stress level. There’s just so much to do with so very very little time. Luckily it will all be over TOMORROW THURSDAY 31ST. I’ll finally be done with summer school, the old apartment will be finally done with (forever!) and I’ll finally get a chance to relax. The postings are only up to this past Monday. I’ll hopefully get back on track with things after Thursday…go for a nice run…do an intense session of Pilates…hiking (so relaxing).

Breakfast: Multi grain cheerios with plain soy milk and coffee.

Later I had a sandwich filled with lettuce, tomato, provolone cheese, pesto, Yves deli slices, spinach leaves and some smart balance mayo with a very small side of more sun chips (they’re addicting)

Snacks: were grapes and Sun chips

Lunch: was a DELICIOUS salad of greens, bell peppers, zucchini topped with roasted chickpeas in a homemade balsamic vinaigrette

Next to the salad, there was a bowl of carrots, hummus, and a variety of cheeses, since I had a HUGE batch of carrot sticks today (not pictured), I wasn’t feeling very caroty, I dipped a little into the hummus, and cheese, but not much.

Dinner: Where’d dinner go…? Did I miss taking a picture?

Dessert: the best carrot cake I’ve ever tasted! Normally carrot cakes are super sweet, but this one was perfect! The sweetness didn’t over power the carrot flavor and the frosting was nicely done. I enjoyed it with a cup of plain soy milk.

I managed to get in a little bakefest this weekend. A batch of coconut granola. I was super low on maple syrup and had no honey, but I think I solved that problem with more brown sugar. I added a little molasses, but I don’t think that did anything to it.

Vegan banana nut bread with flaxseed, and a little bit of orange zest. It came out really moist and flavorful. Way better than my previous loaf of banana nut bread. I think they key is to have really ripe bananas.

Breakfast: I finally found Chobani in Oakland!! A few weeks ago I wrote to one of my fave whole foods market (Farmer Joe’s). Within a couple of days someone responded back to me and now they sell chobani! It’s also cheaper than Fage. :-) I also had a cup of coffee earlier

Lunch:

Sandwich: lettuce, tomato, spinach leaves, basil pesto, Yves deli slices, and provolone cheese on Oat bread. Very refreshing!

Dinner: These were the same veggies/mock meat that was used to make the kebobs. Tonight we grilled them with olive oil, salt and pepper and ate them with rice.

No Bakefest

I guess I got a little carried away with excitement. There’s no way that I have time to have a bakefest! Haha. I did manage to make two batches of coconut jelly  and I AM planning on making banana nut bread tmw AM. My banana’s are finally black (yes!).

Lunch: Left over yao hawn. Same thing as last night. Just wanted to use up the remaining veggies and broth.

Snacks:

Here is my first batch of coconut jelly. I took one….two…three (later) bites, but I doubt that it’s noticeable.

Dinner:

Pizza pizza. Toppings were red bell peppers, spinach leaves, yellow onions, and zucchini nutrition yeast flakes, red pepper flakes, and garlic powder. The crust was Tony’s cheese pizza. The new place has a gas oven the old had an electric oven. It’s amazing what fire can do to the quality of food especially pizza, which should be cooked in like a clay oven (or something). Tonight’s pizza crust was done perfectly. Nicely crisp and moist in all the right places.

I can’t take any more studying!! Can NOT wait until this coming week is over! 6 weeks of no fun, face in book, no baking…..:-( Well, I can’t really say that I won’t be baking at all during these 6 weeks. I think this THurrr….FRiiday I’ll be doing a little bakefest. The best way to relax. Especially after having to clean the filthy and I do mean filthy oven. It’s amazing how shiny and new-like it looks after Easy-Off, wiping, some more wiping, back and arm pains, and smoke alarms going off, and hours of squatting. Oh yes, I definitely need to get my hands dirty with flour (not baked on grease). ;-)

Kashi Wheat flakes with plain soy milk, a banana, and a cup of coffee. For Lunch, I had home made curry (veggies were broccoli, carrots, and potatoes) from scratch! Long was sweet enough to meet me for lunch. I’ll make sure to ask him for the recipe to post. :-)

I Missed Blogging!

Whoo Hoo! The internet is finally working!!!! Who know that a week without internet a person (a blogger) could go crazy!? Haha. Well, the good news is that I have been blogging offline w/ Window’s Live Writer all I have to do now is just click publish. The bad news is that it’s only up to this Sunday. I wish I could write more, especially with this long unwanted absence, but I have an exam tmw AM (the final is next week too). I included some pretty photos of my turtle. :-) For the moment I’ll leave you all with a sigh of relief (that there’s finally internet connection) and (hopefully) interesting photos. At&t incorrectly wrote down our new address (The opr wrote down Street instead of Avenue), so have to wait a little longer. I don’t know why it takes them 2 days to activate the Internet connection. The land line is already working….who knows…., so there will be no Internet connection here until Wednesday….. :-(

Almost done with the Move!

We’ve been moving everything like crazy these past 2 days. I’ve been trying to squeeze in study time in between while spending time with the hubby. So far, so good, but unfortunately, there is no internet connection. It won’t be hooked up until Monday (hopefully). So no picks or posts until then. :-( There isn’t much going on though. I haven’t cooked in the new kitchen yet. It needs to be cleaned BIG TIME!
