A long wait

I have not been good at blogging lately. Time went by so fast! you’ll soon understand what has been occupying my time lately with the next post. There’s a hint in this post. Let’s see if anyone can guess….

Saturday Friday, 08.08.08

Breakfast: Kashi h2h cereal with almond milk and a cup of black coffee. A couple of minutes later I had 1/2 an English muffin with peanut butter

Lunch: consisted of what I had for dinner (below). Canh Chua (sweet and sour soup) with mock fish, slimy soup, and more mock meat with pepper slices. I also made more veggies with the peanut sauce. Everyone seemed to love it :-D !!

Friday Thursday, 08.07.08

Breakfast: Long surprised me with a sweet coconutty bread from Deliciouse Princess Bakery, so I had that with my cup of coffee and a bowl of bubbah

My first attempt at making sopes a pupusa was a SUCCESS! I basically used the same batch of beans and stuffed it in the dough and pan fried it (with very minimal oil) Then topped it with homemade salsa and lettuce. SO good!

My favorite vegetarian sandwich from one of San Jose’s millions of shopping centers. The filling: jalapeno, cilantro, carrots, jicama, crispy noodles, sweet yams, and tofu.

I’m beginning to really like almond milk and might buy it more often.

Mmm, the sopes, fruit shake, mini carrot cakes (and, well, EVERYTHING) look delicious – yum!!

Does the surprise have anything to do with the “save the date” card in the photograph with the almond milk??
