Weekend Almost Here!
It’s HUMPDAY! The weekend is nearing and so are my midterms.
I have to get ready to head out soon, so I’m making this quick. Here is a recap of what I ate this morning and the rest of yesterdays meals.
Wednesday 10.08.08
Breakfast:
Kashi Blueberry Wheat flakes with plain soy milk and a cup of coffee, black
Medium banana. I haven’t eaten it yet. I’ll probably save it for later today
Tuesday, 10.08.08
Lunch:
Left over Mac Un-Cheese. The bread crumbs were still a little crispy! So YUmmy! Before dinner started I cleaned out the pan that had the rest of this mac uncheese. It’s definitely become a new favorite and will pop up again.
Left over Fried rice
Snack:
Raisin Ezekiel bread
Dinner:
Water spinach and garlic
Mock meat stir fried with onions and a little bit of garlic
Late night snack or craving: kashi heart to heart cereal with plain soy milk and a medium banana
Treat:
I had 2 or 3 of these teeny tiny vegan orange poppy seed muffins.




Very interesting meals. I have never heard of water spinach, mac and unchees, or mock meat. I love spinach, so I’ll have to look for this variety at the grocery store. But mock meat? Looks like chicken, but does it taste as good? I’ll try anything once. Oh and where do you by mac and uncheese? That’s a new one.
The muffins look incredibly tasty. What is the drizzle on top?

teaescapade: water spinach is one of my fave vegetables. The stems are hollow inside, which makes them perfect in soups. When cooked right, give a crisp-ness when you bite into it. Mock meat comes in many many varieties. Although it doesn’t taste exactly like meat–it comes pretty darn close. As for it being good, I think it all depends the person. Some people who eat meat, actually like it so much that they incorporate it into their diet as well. Experiment, you might like it also.
The recipe for Mac Un-Cheese is on the website linked to the name on the post. It’s relatively easy to make. I made a few additions of my own (I’ll post those additions when I’m done responding to comments). The drizzle on top of the muffins is basically powdered sugar combined with freshly squeezed orange juice. Very good! Thanks for all your questions. I love your openness to try new things!!
Liz: haha, I didn’t think about the black and white color contrast. Oh, it took me a while to do the icing. You should have seen my hands. They were so sore because I was squeezing the pastry bag so tightly.

Maggie: I can’t wait for the weekend also. Although, I won’t be relaxing much, I definitely will have plenty of time to catch up on some serious schoolwork. Hopefully your weekend will be more spectacular than mine.
Eatingbender: Thanks! I did make them myself. Absolutely love ‘em. The orange paired so perfectly with poppy seed. I actually took a recipe from a cookbook and veganized it (because I didn’t have any eggs on hand). If you want, I could email you the recipe with the changes I made.
Kristie: haha. I actually made two batches of the icing and had quite a bit left over . I didn’t want to toss it (or drink it), so I kept drizzling and drizzling….(mouth watering).
NT: I love raisin bread. Before (a long while ago) I used to eat the SunMaid raisin brand. The price for both brands are about the same where I live. In Ezekiel bread, I like the sprouts. I also like it that it’s not too moist compared to Sunmaid’s. So, to answer you Q, Yes I think it’s worth it.

I hope you did well on your midterms!!! I had three yesterday and they didn’t go to well. I guess I’ll have to drown my sorrows in baking… which isn’t a problem haha. And it’s funny you eat bread as a snack… I do that, too.
