Fun Challenge!

I have seen some people posting challenges on their blog. I thought it’d be fun if I come up with a fun and healthy challenge of my own. I know that some (including me) have a hard time getting enough veggies into their day. I propose a challenge that focuses on eating at least 1 salad a day for the next 2 weeks starting this Sunday the 16th. I wanted to start off with something that wasn’t too difficult or for too long of a time. Now, Why did I choose this particular challenge you ask?

Well, I find that eating fresh raw veggies are the best way to take in valuable nutrients. Plus, it’s SOOoo refreshing and healthy for YOU. The holidays are approaching and making sure to take in veggies over…say…a slice pie (Can’t believe I just typed that!!), will help with weight control. Also, as Long just sang, “It helps you go poo-poo in the morning.”  If anyone would like to participate, please comment with your pledge! The MORE the MERRIER. If you have a blog, we’ll follow along with. If you don’t have a blog, but own a camera/camcorder, you could document it and act as a guest blogger on A Fat Cat Who Created A Vegetarian. Doesn’t that sound easy? Say Yay or Nay.

 

Breakfast:

TJ’s Honey O’s swimming in plain soy milk. A side dish of a large apple. and a cup of tea (pre-splash of soy milk)

Lunch:

Salad: black beans, seasoned and roasted potatoes (red and sweet), mixed greens, w/ 1000 island dressing.

Now on to my review of the Iced Gingerbread Cliff Bar….In the words of Emma, “It was eh” When I first opened the bag I could actually smell the gingerbread, but when I bit into it, it didn’t taste the least bit like gingerbread. It was chewy and not at all sweet to me. Slightly disappointed, I finished the whole bar anyway. Can’t wait to try the Pear Strudel!

When I got home from my internship I randomly snacked on crackers chips and fruit. I may be should have laid off the crackers and chips because I was cramping up a bit on my run.

The rest of Yesterday’s eats:

Silk Peach soy yogurt. Remember when you were a kid and you ate that peach ice cream popsicle that had the white cream filling inside….? This is it, but in soy yogurt form. My new fave!

Sweet ‘n’ sour soup withe brown rice. This soup was made….back from 08.20.08. I just froze it, popped it in the microwave and it tasted just like the first day! Full of flavor and STILL spicy! I still haven’t posted the recipe for it yet. I know I’m such a non dependant person. :oops:

    I’m in. I definely don’t get enough veggies in! Especially on the weekends!

    I’m IN on the challenge— Granted that my dinners consist of a huge salad usually everyday, anyway, but two a day would totes make me happy!! :)

    And you MUST try the other seasonal flavors! I’ve only had the Pear-Apple Strudel flavor (SO SWEET it’s lasted me like 4 days already haha), but I’m def going to buy the other two (again, my brother ate them! ha) and we’ll talk shop ;)
