Recap of Holiday Week
What a week! I am sorry my blogees! I have been gone so long! Although…..I am happy to announce that I am back at home. Home.Sweet.Home. With my kitties! Hopefully we never get to leave again! Well, maybe not until our honeymoon!
I have lots and lots of pictures to show, but had to compile everything into “highlights” of the week rather than posting every.single.thing I ate. It would be soooOo much. I would say close to 25 to 30 photos. So, by highlights I mean, the foodeats that was most significant to me, i.e. most pleasant, most flavorful etc. That means that you won’t be seeing oatmeal/cereal/coffee, even though I had all three during the week.
I wanted to also talk about the Salad Challenge. For those of you who participated, I hope it was fun and interesting for you as it was for me. Even though I didn’t complete all of the days (missed 2), I feel healthier already.
I find that the hard part about incorporating salads into my day is not because I don’t want to eat them, but more because there isn’t any in the fridge. I love eating fresh veggies. I eat them whenever we stock up on ‘em. Problem is, before the challenge, there wasn’t much salad type veggies in the fridge. After doing this challenge, I will definitely try to make sure that my grocery trips include a huge salad bin.

Went to get some coffee from Starbucks, the barista offered me some samples. I didn’t want any. I really didn’t, but he was so nice about it that I just had to accept.

Pictures of the pies on the night that I backed them. The circles on the pumpkin pie is actually extra dough cutouts, everyone thought that they were banana chips.

I went to dinner with a friend a cuban restaurant and had the most AMAZING SALAD!! (on the left). It was so simple too. I think the chipotle sauce , crispy onions and roasted sunflower seeds put it over the top.
I also had roasted corn, plantains, small salad, mashed potatoes, plantain chips, and grilled eggplant. Sorry the pictures are really dark.

Definitely agree that the salad challenge really made me feel great – I did miss a couple of days myself too, but overall, this was an awesome challenge to partake in. In fact, I’ve now been used to having an abundance of romaine lettuce and greens in my fridge for salads! Great challenge Leng!
And wow, delicious eats! Glad you had an awesome holiday!

I did horrible on the challenge! I’d lay my head down to go to sleep and think “I didn’t have salad today!”

Did you make the garlicky yams? I’ve only ever had sweet potates/yams/etc. with the sweeteness hyped up and I am very curious!

Yes, I made the garlicky yams. It was my first time ever eating or making yams in this fashion. After making it, I will definitely do it again. Oh, actually I take that back…I did have the super sweet version, but didn’t like it much. This savory type is much healthier and yummier.
I got the recipe from one of my old cookbooks. Here’s what I did:
-2 lbs of yams, peeled and boiled
-mashed them when they were fork tender
-in a separate small sauce pan, I melted 3 Tbsp. of butter and 3 garlic cloves (minced) together
-s+p
-then combined the butter mixture into the mashed yams.
