Yay DAy!
Almost done with school! I can’t wait! I just finished two exams this morning. It was a real killer. I was really stressed and kept getting nonstop phone calls ( ERK!! ) that I had to shut my phone off. It didn’t put me in the best mood either, but now that I am done for the morning, I’m feeling a lot happier and gippy! I have a little break before I head off to work, so I am going to take that time and pamper myself
I am really behind on comments, but I should get to them soon!
Breakfast: oatmeal with coffee
I came home to this in the mail box! A free sample from Bear Naked. The box looked slightly open and there is only one bag inside. Either someone took the other bag, or I was only sent one. Oh wells…..I guess something is better than nothing. I can’t wait to enjoy it with some yogurt!
Miss Dotties all of a sudden appeared out of nowhere (scared the bejeasus out of me) while I was taking a photo of the sample.

waffles and coffee
My last day (2nd to last day) at my 2nd internship is finally here. The topic we discussed was about pampering our bodies for the holidays. Last time I baked the students Vegan vegetable muffins and they scarfed it down, even after I told them I put tofu in them! This last one they loved as well. It’s just a classic yellow cake with chocolate frosting (recipe from Williams & Sonoma, Cakes). They were a big time hit! so moist and delicate. (Chanmary these were the cupcakes I wanted to bake when you came last, but no time).
Before I left, I set aside 2 (1 for Long & 1 for me). It was a nice treat especially after russssSSssshing all the time!
I almost forgot to eat!! Luckily I made lentils the night before for emergencies. It had a slight (very slight) kick to it because I added paprika and chipotle spices.
Dinner:
Free veggie burritos from Long’s work. Insides include: pinto beans, brown rice, a little cheese, corn, and…I think that was it. I added some hot sauce.

Breakfast: Kashi’s cereal w/ plain soy milk
Red Brick Pizza is my new favorite pizza joint! Below is the veggie gourmet pizza toppings were tomato slices, artichoke <3 s, olives, red sauce and red onions on a thin wheat crust!! YUMMMY!!
I also had a few breadsticks, which reminded me of Olive Garden’s.

Dinner: mixed greens with lemon squeezed on top and apples on the side.
And who could EVER go wrong with a bowl of veggie pho. I swear I could live off of this!

What vegan veggie muffin recipe did you use? It sounds cool.
What does Long do? Does he work at a restaurant?

Hi! I was just going to let you know when I got my sample the box was pretty beat up too, and I had one packet also. I think that’s all they sent. It was very yummy though! Enjoy.

Maggie: Long’s the Learning Specialist for the Special Education Dept at a local high school. Sometimes the students don’t finish all of their food, so the teachers there take them home. It’s not the greatest food in the world, but hey it’s free
