Dragging On
two of my classes are officially over!!
I can’t express my relief enough. It’s been a stressful semester. I am actually glad that it’s going to be over. I was supposed to go into my internship today (last day there), but my preceptor had some person things to take care of.
Dragging on for one more day. arg!! It’s around lunch time here, but I still haven’t had anything to eat. After I finish posting I’ll have to make a list of groceries to buy and do a little kitchen cleaning. (Stupid ants). See Ya’ll laters!!
Lunch:
A simple salad
So Delicious’ Lemon Drop soy yogurt. It wasn’t the best. I prefer WholeSoy better. I used the granola that I received in the mail from Baer Naked. To be honest, I have had better granola from them. This one wasn’t my thing. It was too chewy, almost had no flavor to it and it sure didn’t taste fresh. I think I’ll go back to the homemade granola.
Dinner:
Baked tofu. I marinated the fresh tofu slices in soy sauce, sesame seed oil, s+p, onion powder before I left the apt (in the AM). I came home (late at night), preheated the oven to 420 (somewhere near there), and let it bake for about 30 minutes then flipped it then baked it for another 10 minutes. It came out delish!
There is absolutely no food real food in the fridge at all! We are running so low on food that it’s kind of sad. Both too tired to go out and buy food, plus it was a really late dinner (10:00 o’clock pm), we decided to just make due with what we have. Initially Long was just going to cook eggs for dinner, but I proposed the idea of making it like a breakfast burrito. He added Yves ground tvp, frozen edamame, spices and onions with the eggs. We then took a big piece of lettuce and layed it right on top of the tortilla (who knows how old) and had dinner.

And mmm, delicious eats. I love the tofu! It looks really tasty.
Crunchy potato chips – yum! Chipotle and Cayenne pepper sounds tasty. What brand does it happen to be, because I have never heard of such a flavor!

Sharon: the chips were actually homemade. It’s really easy. just thinly slice a russet potato, toss them in a large bowl with oil, cayenne pepper, chiptole powder and s+p. Then bake in a 420 F oven for about 20 minutes really yummy!!

Oh wow, home made potato chips?
To thinly slice the potatoes, do you use one of the slicer machines/contraptions?

Sharon: I wish I had the fancy equipment for that. It would make life so much easier, since i eat so much potatoes. hehe. But No I just use a very sharp knife.

Sharp knife? Check!
I wasn’t sure if I needed some potato slicer to do the trick, but if a knife worked for you, I hope it will work for me as well.
