How Often do you….?

There’s not much food in the fridge. I haven’t gone grocery shopping for lunch. You know…lunch is my hardest. I mean it’s always difficult for me to decide what to eat for lunch. Maybe I should start incorporating my lunches in the Weekly Dinner Menu as well. I’ll have to start next week because Long and I are heading out to San Jose this weekend for Father’s day. I haven’t been there since January (our wedding day). That might be a long time away, but after going almost twice a month on entire weekends, I think it is okay.

Question:

    • How often do you visit your in-laws?
    • How often do you visit your family members?

What I ate yesterday:

Homemade frozen waffles pulled out of the freezer and topped with creamy peanut butter and raspberry preserves.

Green Beans & Tomatoes with rice. These green beans weren’t the best, but the tomatoes were ripe and sweet. :-) My favorite green beans are those long Asian green beans. I just love the flavor and texture of it better. This one is too bland and soft.

I had a craving for the Blueberry Blackberry Oatmeal. It seemed like I had none of the ingredients, so I tried my best with what I had on hand:

    • rolled oats ~instead~ of steel cut oats
    • raspberry preserves ~instead~ of blueberry blackberry sauce
    • granola ~instead~ of brown sugar crumble

It actually turned out pretty good. Instead of making my oats watery like I normally do, I made it “thicker” and with a little more crunch. don’t ask me how I did it. I just did. Experimenting and will soon find the right texture soon. I should get my hands on some steel cut oats though…

    • Hiking with Loomis at Caesar Chavez dog park
    • Random exercises: chin-ups, chair dips, push-ups, Pilates
    • Grocery shopping: tonight’s dinner is either burritos or pizza. Haven’t decided yet.
    • Maybe stop by the fabric store in Berkeley

I visit my in-laws almost every weekend. My family – maybe once a year :( . Too bad they live half way across the country.

I don’t get to visit my parents that often since they’re far away and I get very busy in my semester. As for in-laws.. they don’t exist hehe

I almost always eat leftovers for lunch, unless there’s not enough or I’ve bought an avocado or want a salad or something. Our family all lives here and we try to see them each a couple of times a month though we should try for more.

Mmm I haven’t made waffles for a while.

my weekday lunches are easy…because I normally have a base of greens and add ramdon “stuff” I have in the fridge. Hubs eats leftover meal type foods…
Weekend lunches are harder because I try and make a LUNCH for everyone and I have to usually cook a meal like dinner…and with baby.. it’s a lot to fit in that time of day. Lately it’s been fend for yourself…sandwiches, leftovers etc.

Homemade popcorn?! You have my attention!

homemade popcorn is the best! I posted the recipe on my recipes page. Try it out and let me know how it goes. It’s super simple to make, just a little time consuming because you have to stand at the stove and watch it so that it does not burn. you could also make it “kettle” popcorn by adding sugar to it. I’ve tried this and added chocolate chips and dried fruit, it was good!

My husband eats leftovers for lunch as well. Me, I’m a little more high maintenance. I don’t really like to eat leftovers for lunch. I prefer sandwiches and hand held items. I should incorporate more greens into my lunch though… and I agree it is a great excuse to be creative. :-)

I was planning on posting something about vitamins and minerals, but ended up doing just one (for now). I feel that there are so much info about each and everyone that it’s hard to pass it up. It’ll eventually accumulate on all of the vits and mins that are controversial for Vegetarians/vegans and I’ll provide links to each one, for easy reference. Thanks for visiting the circle!
