Good Morning!
It’s cold this morning here in Oakland. Weather forecast says it’s going to be 80F. This past weekend was very warm; Sat 86F and Sun 82F.
Saturday was the worst for all of us though. We went for a long 4 mile walk with Loomis that day. Poor Loomy was dying! He kept through it though. Since he’s completely black and is just a pup (this was his longest one full walk), he was very hot from the heat. At one point he plopped down on the ground. Then we found a cool and grassy area to take a long break (in addition to many little ones). We now know not to take him on such a long walk in hot weather.
Sunday was much cooler. In fact, it was super nice. I wore shorts and a tank and was not cold at all! LOVED it. We decided to give Loomis a break and just take him to the dog park instead. Monday had a short walk and a short time in the park.
For my breaky this morning, I had a cup of earl grey tea. Not really hungry, but I will eat something soon (before 9:00) for sure. I’m going to need my energy as I plan on doing some yoga and walking with Loomis. Speaking of workouts, I’m trying to get back into the habit of updating my fitness page again. Breakfast:
This morning I had a bowl of oats. I did something a bit different with my oatmeal though. Instead of adding plain ol’ regular bananas and brown sugar, I just cooked the rolled oats with plain soy milk (no salt/sugar/vanilla extract). When it was done, I topped it with cold raspberry preserves, granola, and sliced strawberries. The cold raspberry preserves cooled the hot oats nicely and I didn’t burn my tongue trying to get a spoonful. It was still hot enough to warm the strawberries, which left a warm bite of tartness. I haven’t experienced that flavor in a long time, so it was very pleasant in my mouth. The granola added a nice texture as well—crunchy. I finished it all off with a cup of earl grey tea.
I had a bunch of these crunch bars and orange cream filled ice cream bars throughout the day. It was very hot, so these made it more bearable.
Dinner: Canh Chua Soup or Vietnamese Sweet n’ Sour Soup
I also made a video showing how to make this soup. TWO VIDEOS in one day. Yay! Luckily this time I remembered to take a photo of the actual soup not like last time (read on further below). This video is in the process of editing, so it’s going to be a bit before it is up. Hopefully not too long!

Random Eats throughout the week
The following are not necessarily on the same day. I had a bunch of photos lined up, but they all got mixed up somehow.
Lunch:
I finally had a mock tuna sandwhich with mayo inside. Long made me this sandwich and he added some spice to it.
Iced Hazelnut coffee
Dinner: Banh Cheo.
I made a video to show everyone how I make this meal. Silly me, I made the video, but forgot to take a photo of the actual Banh Cheo meal! This explains why I just have a photo of the package mix here. Stay tuned to see the video post. Don’t worry I’ll notify everyone when it’s done being edited.
Making Sopes on a random day
We still had leftover burrito filling, so I decided to make Sopes from the corn flour. This is the same flour that I used to make the tortillas. Here is the corn flour mixture, baking powder, and salt.
I added water to the batter and shaped them into 1/4 cup balls and then flattened them out with my cup. I folded all of the edges up and baked in the oven for 11 minutes at 350F. Here they are fresh out of the oven.

I always love reading.
Oatmeal/oat bran is definitely really really good when you cook it in milk. I’ve been cooking mine in a water/chocolate soy milk/almond butter mix. Really yum. I always let it cool to room temp before I eat it.

Yeah we’re having a great time with Loomis. We should have gotten a dog a long time ago. Yep, we’re taking Loomy-bin with us on the camping trip. We’re actually going camping this weekend. yay!

Ooo I should try making sopes too. I don’t think I’ve ever had them but I’m sure I’d like them. Looking forward to the videos, though I don’t know if I could handle making soup in the summer.
