98%, Salad Challenge Clarifications, Baking Question.

Well, I’m slowly getting back into the habit of taking photos of everything that I eat. I may have missed a couple here and there, but I think I succeeded to photograph 98% of everything. :-)

I’ve come to the recent realization that I was not clear with the “rules” that were posted for the Salad Challenge.

I’ll just write what I wrote in a previous email.

Not everyone is able to stick with it and be perfect ALL OF THE TIME. We are all human. I also know the rules can be a bit challenging to follow, but that’s the fun part right? haha. In fact, the last challenge I messed up a couple of days. So, just try and stick to the rules as best you can, if you can’t that day(s) it’s no biggie.

If you forget to eat salad that day, start again the next day. You won’t be “kicked out” or anything.

Here are some clarifications regarding the Salad Challenge Rules:

Salads should fill each of these requirements below. Examples are included.

1. Include RAW leafy greens, but not necessarily in it’s natural state. For instance, the salads can be blended or eaten straight off a plate.

2. Contain at least one serving from each of these food categories (these can be cooked or eaten raw):

  • PROTIEN: legumes, tofu, seitan, tempeh, gluten, nuts, dairy
  • VEGETABLE (and/or fruit) of different color: carrots, beets, zucchini, sweet potatoes, radishes, bell peppers, red/green onions, herbs,
  • CARBOHYDRATES: croutons, pasta,

3. Include something you consider fun (can be anything, but leafy greens):

chocolate candy

more veggies

Ice cream

pizza

repeat what falls under item #2 above.

cake

dried/fresh fruit

anything else…

4. Dressing is optional.

Braggs Amino Acids

EVOO

Lemon Juice (yummy)

Ranch/Italian/Honey Dijon…

Things to keep in mind….

Some items will count more in more than one category.

Example: chickpeas/garbanzo beans will count as protein, vegetable, and carbohydrate.

The carbohydrates portion do not necessarily need to be super filling.

They could include things like croutons, which as you know are common in salads, or anything you can think of.

The protein portion could be either

nuts (one serving is a tiny 3 oz), eggs, legumes (which double counts as a carb and protein).

The something fun part is not really a dessert on top of your salad. It’s just so salad eaters do not get bored with the salad.

It could be dessert or just anything, from processed sweets to fresh fruit.

and red grapes

Sushi. The rice I made was a bit soggy, so this meal was super duper filling. Combos included: avocado, pickled relish, cucumber, & green onions.

I later found out that I bought sweet rice instead of sushi rice. doh!!

Bi Chay is a Vegan Pork dish. They are normally found as a filling in vegetarian Vietnamese sandwiches. I couldn’t pinpoint what were all of the ingredients, but from the taste and look of it this is what I came up with:

noodles, carrots, black fungus, “fish” sauce or soy sauce, tofu sheets,

I ate the entire thing myself even though I wasn’t the least bit hungry.

Breakfast:

Instead of doing the salt and pepper on top of a boiled egg, I subbed the salt for fermented soybean—lots of salt there. Turned out decent.

Off to make Angel Food Cake!! It’s my first time making it. Wish me luck!

…………….

………

….

I just finished making the Angel food cake…..As odd as it sounds, I don’t know how Angel Food Cake should taste like….this one came out sweet. The recipe I was using called for 1 3/4 cups of sugar. Is Angel food cake normally sweet? Did I use too much sugar?

      Elise:

Yeah I sure did. It was long overdue. Your name was saved on the list. I thought it would be a lot easier on the participants to view the names and sites instead of having me to type it up each and every time.

  5. August 5, 2009 at 10:13 AM | #6

Yes, angelfood cake is sweet… and light and fluffy. :) YUM!

  6. August 5, 2009 at 7:33 AM | #7

Leng, angel food cake is typically quite sweet, light, and spongy — I bet yours is pretty good!

  7. August 5, 2009 at 6:19 AM | #8

Hm I don’t think it was too much sugar. I was just looking at this recipe (http://bakingbites.com/2005/06/the-best-angel-food-cake/) and she used 1 1/2 cups. In my experience angel food cake is sweet yea. Hope you like it! You could freeze some for a salad topping next week. ;) Love the photo with Miss Dottie and the fruit. I’ve never heard of Bi Chay but it sounds really delicious.

      Ashley:

THANKS SO MUCH FOR THE RECIPE LINK!!
The author of that site’s cake looks absolutely perfect! not even an air pocket and even distribution looks throughout. I’ll have to try and make another one as I have all of the ingredients on hand right now. I think my mistake was that I used 1-3/4 cups of granulated sugar, which is MUCH more dense and heavier than powdered sugar/superfine sugars.

I think I’m going to take your advice. I’ll cut this batch that I am about to make into piece and freeze them. Then when I’m ready for “croutons” they’ll be there. :-)
I’ve been doing a little internet searching and found a recipe for Bi Chay. and this was the only recipe that I found… click here also fyi, Chay in Vietnamese means vegan, so if you see something that has Chay on it at the Asian Market, it’s most likely vegan.

      Catherine & Melissa:

Thanks for filling me in! I didn’t know if I made it correctly or not. Mine was def. spongy, but not light and fluffy. haha.

      Coco:

yeah I did too! You should join again, if you’re up for it. :-)
