About Me
Leng
I became a vegetarian in the Fall of 2005 after picking up a leaflet from school. After reading the leaflet and doing much of my own research, I began to venture into a whole new world–the world of a meatless diet. I can honestly tell you that I was shocked and overwhelmed with the treatment and confinement of animals, especially when I saw one particular picture of a calf raised for veal resembling Miss Dottie. I decided that day, December 19, 2005 that I would never eat meat again. Ever since I began on this path, I’ve not only lost weight, feel healthier, but learned how to accept others for who they are regardless of their dietary preferences.
I know meat is a big part of many cultures and have become incorporated into many family traditions and I intend to not interfere with that.
I am not here to judge or criticize people, meat eater or not, of their dietary preferences. I am simply here to document my daily intake while sharing the knowledge that I have learned over the years from my schooling and personal experiences.

School
I currently attend Peralta Colleges and am in the process of pursuing a career in Nutrition and Dietetics. Before that I attended Heald College to earn my A.A. in Business Administration with an emphasis in Accounting. It was not until I decided to become vegetarian that I wanted to become a Registered Dietitian. It was the best career move of my life. I’ve learned so much along the way and I truly feel that I can help others gain access to quality food regardless of their income level.
Food and Money
They have strong connections to each other. Sadly as it sounds, how well you can eat depends on how much money you have in your pocket.
When you visit this site, you will find ways to save money while still enjoying the foods you love and crave. I believe that you can still eat great food and stay within your set budget (See budgeting tips).
I also believe that food plays a strong connection to culture. With that being said, I’d like to also eventually help people eat according to their budget and their cultural background.

Love your blog! I am new to the blogging world and just came across it. I’m a dietitian, so it is a huge part of my life to talk about food- and I love this whole world of food blogs! I hate that I missed your salad challenge- that sounds like fun- maybe next time!

Hi Welcome to the blogging world! We foodies all have a major thing in common–we love to talk about food.
I think even to the point that people assume we have eating disorders.
No worries about missing the salad challenge, I have decided to hold it every 3 months. If you want you can participate along with us. Although you won’t be “officially” in, it’s always good to get an abundance of veggies. Of course I don’t need to tell ya that. You’re an R.D.!

Hi Leng! Just wanted to say hello. I have seen your comments on other sites and heard about your blog because of your salad challenge.
I love the idea of eating healthy on a budget! I’ve really tried to pay attention to that in the last year and cutting down on meat has definitely helped out. I am still a meat-eater but I am conscious of my intake and eventually would like to be at least semi-vegetarian!
Looking forward to reading more!

I love your blog and am delighted that I found it. I too have just decided to go meatless after watching a VERY distrubing documentary called Earthlings. It changed me forever. I am currently still eating cheese and fish, but I’m loving the changes already and I’m not going back! I look forward to reading your blog!!
