Special Guest Post by Tanookie

Hi everyone,

My name is Valerie AKA tanookie from The World Has Turned and Left Me Here.  I am good friends with Leng and Miss Dottie and I share Leng’s passion for eating yummy veggie food, an active lifestyle, and especially her love of overweight animals.

I don’t usually take photos of my food but since this is a food blog, here goes:

Breakfast: Pumpkin Oats with Almond Butter:

1/3 cup of soy milk, water, and old fashion oats
1/2 cup Whole Foods canned pumpkin
2 tsps of pumpkin pie spice
1 tablespoon of almond butter
I also drank two cups of San Francisco Coffee Company’s French Roast with a little soy milk.

Snack: Almost vegan chocolate chip cookies

Bascially a purely vegan receipe but I used eggs instead of egg replacer.  They came out super good.  I subbed raw sugar for regular and whole wheat flour for white flour.

Lunch: Flaxseed and Pistachio Pizza with Red Onions and Rosemary.

This is a flatbread pizza that I buy from Whole Foods.  It is my very favorite frozen pizza.  I needed something quick today since I came back from Aikido and grocery shopping with a major hunger.

Exercise:

Since it’s Wednesday, I have two Aikido classes (12:00 PM-1:30 PM and 6:00 PM to 8:00 PM).  Thus, I am usually very hungry on Wednesdays.

Guest Post

Hello all,

This is Leng’s husband – Long. I’m guest posting tonight because my wife is a little busy with school. To start off, I would like to let you all know I’m very proud of my wife. Her dedicated efforts to maintain this blog, desire to further herself by continuing her schooling, taking care of our new baby brat Loomis, and of course always coming of with great meals for me to EAT.

I don’t know if she’s ever mentioned, but when we first met my “vegetarian” diet consisted mainly of Corn flakes or Raisin Brand for Breakfast (which I would only eat once every two weeks), a Powerbar – peanut butter or banana flavor – for lunch, and pasta with red sauce straight out of the can for dinner.

Oh how my life has change!

Well on with the post.

For this past week we didn’t meet our budget. I think we went over by 50 cents, something like that. We’ll just have to try harder as every penny counts. Here’s this coming week’s “Weekly Dinner Menu”

Sunday – Water spinach stir-fry with special seasoning baked tofu.

Monday – Leftovers (My favorite dinner night! No cooking, but still good food)

Tuesday – Leng is going to this Foodbuzz thing so she’s eating whatever is there. Me…I’ll go looking for one of my old Powerbars. I think I saw one in one of my old boxes the other day.

Wednesday – Vegan burritos w/baked tofu

Thursday – Butternut squash and carrot soup w/breadrolls

Friday – Chana Masala w/ Pakistani dhal. There use to be a great Indian restaurant called Sabina’s in Oakland. They made the best Chana Masala, but they closed down :(

Saturday – Leftovers

Sunday – Banh Xeo
