A Full day’s worth of eats and 2 videos!

For breakfast this morning I am having:

1 hard boiled egg. I made it yesterday for my egg and mayo sandwich and it was just sitting there all by it’s lonesome without anyone to eat it, so I volunteered to put it into my mouth. Sorry for the no pic, I ate it before I could take a pic. haha.

2 Palmiers 1 Palmier cookies or Elephant Ears or Hearts, Whatever you call it. It’s those delicious cookies that are rolled over and over again in sugar.Picture2 022

I am also enjoying a cup of earl grey tea & soy milk with those cookies.

Yesterday’s Eats:

Breakfast: Eggs and Waffles topped with Jam

Honestly, I have no idea when I ate this burrito. Well….it may have came from yesterday….who knows….We rebooted our computer (you’re supposed to do this every 6 months or so, even with laptops), so I have to set up & install my previous programs as well. Lately, the computer has been uploading the pictures with a different program that does not sort out the dates. Fortunately, PCs are useful in that they let you do what ever you want. :-) That’s right I am a PC lover—I really dislike Macs. I mean I love their designs and everything, but if there is not a PC converter on the Mac, I get really frustrated with it. Anyway, this is a basically leftover fillings for the burrito we had the other night.

Check out how big my burrito is! Here it is sitting next to oa 32 oz. bottle of Tapatio hot sauce.

I finished every last bite! It was so good.

Lunch: Egg and Mayo sandwich on whole wheat bread.

I didn’t add salt or pepper to the filling, so it was a little bland. All the same, this sandwich brought me back into childhood. This sandwich is sort of like the sandwich every kid in my neighborhood had. Picture2 017

Dinner: Spaghetti

Long and I were so tired today. We were super active outdoors, so when we finally made it back home, we really did not want to cook something complicated. The last resort for me would be spaghetti. When you see this dish on my blog, please note that I was either extremely tired or apathetic of what I ate that day. Today was the former.

Video Post #2: Food & books

Here you have it video #2! I hope you’ll enjoy it. A couple of notes to share with you:

  • Don’t pay attention to my slouching. Lately, I’ve been having really bad posture–NOT GOOD. So, if it looks like I have rolls, try to ignore it. :oops:
  • All the noise in the background is Loomis running around like a mad dog in and out of his crate with his sheep in his mouth. At one point he looks directly at the video camera. Funny guy! :lol:

Loomis Back From the Hospital

I thought it would be nice if I did a video on Loomis. He just got neutered, so that would explain the e-collar aka the cone. Please ignore my squeaky voice. I’m one of those obnoxious people who baby-talk their children, uh I mean pets. :-)

Quick recap of some Eats & first video post!

Burrito night!

The delicious filling consisted of:

    • Avocado
    • romaine lettuce
    • homemade salsa (garlic, vinegar, tomatoes, lime juice, cilantro, red onions)
    • sauteed Morningstar’s meal starters (ground version) with yellow onions
    • the green sauce on top is an Jalapeno-tomatillo sauce that I got from Jennifer’s blog, Veg*n Cooking and Other Random Musings. I made this batch a long time ago, separated the sauce in individual ziplock bags and froze it. When I was ready to use it, I simply defrosted it in a bowl of hot water.

Homemade focaccia bread.

This bread is so awesomely easy to make and it tastes just soOoo good! It can be eaten on it’s own or dipped into soups (like I did here in this post) or you can use it as the dough for the pizza, which I have done in the past.

Roasted Carrot-Onion-Butternut squash soup.

Long made this dish. I forgot what it was called (will have to ask him to edit it into this post later), but it consisted mainly of lentils, onions, tomatoes, and cilantro. Oh, also a little bit of ginger as well as other spices.
