Coconut Jelly
Cook time: 5-10 minutes
Ingredients
- 3-1/4 c. water
- 1-1/2 c. granulated sugar)
- 1 tbsp agar-agar powder
- 1 small can (14 oz.) of coconut milk,
- DO NOT GET THE ONE THAT SAYS “GATA.”
Jelly:
Place the water in a saucepan with the sugar, sprinkle over the agar agar powder or flakes and stir them in.
Bring the water to the boil, then reduce to a strong simmer for 5 minutes until the sugar and agar agar have dissolved.
Meanwhile in separate saucepan, on median-low heat, cook coconut milk, stirring occasionally.
When done, Slowly Pour Jelly mixture into mold pan, preferably a 9 x 13 inch cake pan
Immediately, but gently pour in the warmed coconut milk.
Let sit until completely cooled. normally about 6 hours.
Warning: Do not refrigerate or cover until completely cooled
Tip: I normally make this dessert a couple of hours before I go to bed. It makes the wait time easier to endure. Then when I wake up in the morning, I pop it in the fridge and about an hour later, it’s ready to be eaten.
I totally dig agave and LOVE all the fun you can have with it. This sounds amazing. I have tried something similar using banana ‘coins’ in the agar bottom layer.
