Grilled Corn with Garlic “butter”

I was in charge of making the corn. Grilled corn is one of the best savory snack/dessert! It’s so easy to make too! What I did was wrap the corn in foil, cooked it in the oven ~350 F for 10-15 minutes (you could also steam it)

Then placed it on the grill (with the foil wrap on), while rotating, for a good 5 minutes. I’m sure you could skip that step though.

Then I took the foil off and cooked the corn directly on the grill pan, rotating on each side for even cooking.

While it was cooking, I made the garlic butter:

4 cloves of garlic minced,

4 T. of smart balance margarine

1 stalk of green onions (this one had cilantro also)

I cooked the garlic and 1 T. of margarine until the garlic started to brown, then added the rest of the margarine. Once it melted, I added the green onions. Stirred, then poured it right on the corn.

You could probably add a pinch of salt to bring out more flavor. I think I’ll do that next time.
