Peanut Heaven Veggies

Peanut heaven sauce:
- ¼ yellow onion, chopped
- 4 cloves of garlic
- 1 cup each of Coconut milk and water
- ½ cup Peanut butter
- About 3 T. Paprika
- 3 bay leaves
- 1/2 t. Cumin
- 1 t. Curry powder
- ¼ t. Turmeric
- Chili garlic sauce
- 3 chili peppers
- S and P
- Peanut oil for cooking
- Roasted and chopped peanuts
In a small pan sauté garlic and onions until translucent on medium high heat. Add coconut milk. Peanut butter and spices and peppers. Stir bring to a boil then reduce to a simmer. Add bay leaves and chopped peanuts. The whole process takes about 10-15 minutes. This makes for about 2 cups of sauce.
Veggies
- 1/3 cup of Edamame, frozen
- 1 carrot chopped
- ¼ cucumbers chopped in small pieces
- Kat-na (aka Chinese Broccoli) stems and leaves separated
- Peanut oil for cooking
- S and p
- Chopped peanuts
In a small pan, cook carrots, kat-na stems, edamame until slightly tender on high heat. This takes a up to 5 minutes. Season your veggies with s an p.
Reduce the heat to medium and add the peanut heaven sauce to your liking. I added about ½ a cup. Add chopped peanuts and kat-na stems. Cook until the leaves are tender. This takes about 2-3 minutes. Topped with chopped peanuts and serve with rice.
